I am absolutely not against eating potatoes, but I do believe it is one of the less nutritious plant foods. Nevertheless, I am always looking for new ways to eat vegetables, besides just cooking or steaming them. Cauliflower is one of those vegetables that is super healthy, but not that tasty. Mashed cauliflower may seem like baby food (I’m sure it is) but that doesn’t make it any less healthy and yummy! Adding a white potato or (even better) a sweet potato really makes it seem as if you’re eating mashed potatoes. Recipe below!
