Zucchini noodles (or: ‘zoodles’) have become a trend and a fun way to include more veggies in your spaghetti dishes. So in this article I share a simple zucchini noodle recipe.
You make these noodles by peeling the zucchini and slicing it with a spiral or mandoline slicer (or a knife). NOTE: this is NOT real spaghetti! I think the name is slightly misleading, especially for a pasta lover like me. I like zucchini noodles, but it’s not real spaghetti. I can’t eat a plate of zucchini noodles and feel as happy and satisfied as I do after eating a plate of spaghetti. But it’s healthy, so what I like to do is mix wholegrain spaghetti with zucchini noodles. Remember, whole grains are healthy grains 1. Also, cooking zucchini noodles is much faster than cooking regular spaghetti.
I thought of this zucchini noodle recipe on one of those evenings I was aimlessly wandering through the supermarket without any inspiration or will to cook. Cooking zucchini noodles is very easy; this recipe is simple and doesn’t take much time. Also, it tastes really good :-). Recipe below!
