Recipe: Veggie chips

These healthy vegetable chips are a great snack – easy to make, low-fat and a good way to eat more vegetables. The advantage to making these yourself, as opposed to buying them, is that they are much healthier. Read on for the recipe.

I have been trying to limit my oil intake for weeks now and limit the amount of processed foods I eat. A few days ago I was craving something crunchy (as you do) and decided to make my own baked veggie chips. All you need is a few fresh vegetables, a little (LITTLE) bit of oil, lemon juice and some spices. Oh, and an oven. That’s it!

Instructions
  1. Wash and peel the vegetables.
  2. Using a mandoline or slicer, slice the vegetables into thin slices (as thin as possible, the thinner the better!)
  3. Place the vegetale slices on some paper towels and sprinkle with salt and the other spices. Set aside for about 20 minutes.
  4. Preheat the oven to 180 degrees Celsius.
  5. Place the vegetable slices on a baking tray lined with parchment paper (make sure they don't touch each other). Spray/drizzle with a LITTLE oil and some lemon juice and put in the oven for 15-20 minutes. Work in batches if your oven isn't big enough to bake all the veggies at once.
  6. Leave the chips to cool before eating them. The cooler they are the crispier they are. Enjoy!
Recipe Notes

The veggie chips are prone to burning, so closely watch them while they're in the oven!
