I once bought a jar of vegan Parmesan cheese at a vegan webshop (www.veggiedeli.nl) and re-created it based on the ingredients on the label. It contained sea salt, walnuts and nutritional yeast and it was so good! After reading up on vegan Parmesan recipes I discovered that grinding and mixing raw nuts with nutritional yeast is a known way to create no-cheese Parmesan. Adding onion powder is my own addition; I love the combination of nutritional yeast and onion powder because it creates an extra cheesy taste. I’ve tried making this recipe with almonds, walnuts, cashews and macadamia nuts and they all work really well. Macadamia nuts are my favourite; for this recipe I used both cashews and macadamia nuts because I didn’t have enough macadamia nuts. Whatever you choose: make sure the nuts are raw and unsalted.
