I always loved fried rice – baked rice with veggies and egg. I still order it sometimes in restaurants but since it isn’t vegan I don’t eat it too often. Luckily, you can easily make your own eggless fried rice with tofu instead of eggs. Scroll down for the recipe!
All you need to replace the eggs is scrambled, curried tofu.
To make the end result look pretty, you can grease a small bowl with a little oil, put the rice in it (press down with the back of a spoon) and turn it over on a plate. Look how pretty!

Ingredients
- 150 grams rice Basmati
- 150 grams firm tofu drained
- 150 grams corn kernels canned
- 80 grams peas frozen
- 1 clove garlic
- 3 spring onions
- 1 small white onion or shallot
- 2 tbsp. soy sauce
- 30 grams nutritional yeast
- 1 tsp. Turmeric, ginger, onion powder, paprika
- Pepper & salt to taste
- 1-2 tbsp. sesame oil or olive oil

Instructions
- Cook the rice according to package directions. Set aside.
- Chop the garlic, onion and pepper.
- Crumble the tofu in a bowl with a fork or your food processor (pulse a few times until the tofu is crumbled).
- Add the spices to the crumbled tofu and set aside.
- Heat the oil in a large wok or skillet over medium-high heat. Add the garlic, onion, pepper and frozen peas. Cook for about five minutes.
- Add the corn kernels and tofu and stir through.
- Add rice and soy sauce and cook for about 2 minutes until warm.
- Finally, add nutritional yeast to taste. I use lots, but just add as much as you like! Enjoy!
