Recipe: Vegan chocolate pudding

I am a HUGE fan of silken tofu. If you don’t know the difference between silken and regular tofu, I suggest you buy both and see what all the fuss is about. It’s great for making many different spreads, sauces and even chocolate pudding.

Silken tofu is heaven. It slides through your fingers and needs almost no time to blend into a smooth, creamy something. This something can be mayonnaise, vegan cream cheese or… chocolate pudding! The first time I bought silken tofu I was surprised by how much it resembled pudding. That’s when I decided to add some cacao powder and see what that would taste like. It’s delicious, but it does need some sweetener. I used agave syrup for this recipe, but maple syrup works just as well. This recipe is for one; just double the ingredients if you want to make chocolate pudding for two.

  1. Add the tofu, cacao powder and agave syrup to your food processor and blend until the mixture is smooth.
  2. Serve with some grated coconut and/or cocoa nibs on top, or some fresh fruit.
Recipe Notes

The pudding is best after chilling it overnight (or a few hours) in the fridge, but you can eat it straight away too. It’ll just be a little less solid (but just as delicious).
