These heavenly healthy vegan chocolate chip cookies are dairy-free and free of eggs and added sugar. They are completely vegan. Yay!
The only sugar in the cookies is that which is in the chocolate chips. Note: the coconut oil is essential in this recipe. I tried making these cookies entirely oil-free, which would have been even healthier, but they taste like rubber (seriously). You might as well eat your mouse mat (if you still have one).
Anyway, after 839572 failed attempts I found the perfect recipe, vegan, and as healthy as I could think of. Try to use extra virgin coconut oil for this recipe as it’s the healthiest kind. Odourless coconut oil is a processed product with very little nutritional value.
I used very dark chocolate for this recipe with 85% cacao and white vegan chocolate with rice milk.
I used whole wheat flour for these cookies, but you can also use oats flour or spelt flour. You can also add chopped nuts if you want cookies with a bit more crunch. - 200 grams whole wheat flour
- ½ tsp. baking soda
- ½ tsp. salt
- 8 tbsp. extra virgin coconut oil
- 8 tbsp. unsweetened apple sauce
- 3 tbsp. pure peanut butter
- 1 tsp. vanilla essence
- 200 grams dark chocolate (>70% cacao)
- 100 grams vegan white chocolate
- 1 tbsp. raw cacao powder optional

- Preheat the oven to 180 degrees Celsius.
- Sift the flour, baking soda en cacao powder in a large bowl. Set aside.
- Melt the coconut oil and mix it with the apple sauce, vanilla essence and peanut butter in a small bowl.
- Add the wet coconut oil mixture to the dry flour mixture and mix well until smooth.
- Chop up the chocolate and add to the batter. Stir well with a spoon.
- Put some parchment paper on a baking tray. Put a spoonful of dough on the tray per cookie (so about 16 spoons of dough) – make sure there is enough room between the cookies.
- Use a spatula to flatten the cookies a bit. Do this again after they’ve been in the oven for about 7 minutes. The cookies need about 15 minutes of oven time, make sure you check on them from time to time. They may need 5 extra minutes depending on your oven. Leave them to cool before you eat them and save them in an airtight jar. You can also freeze them.
