Recipe: Tofu mushroom stir fry

This tofu mushroom stir fry is one of my favorites. I love mushrooms and this dish contains three different kinds. I like to have this vegan mushroom stir fry for lunch or for dinner, with either rice or rice noodles. You can add any veggies you like to mix it up. Scroll down for the recipe!

  1. Cut the tofu and make the marinade by whisking the sesame oil with the sugar and 2 tablespoons of soy sauce. Sprinkle the tofu with the marinade and set aside.
  2. Heat a wok or skillet over medium-low heat with a little water. Add the garlic and chili pepper and cook until soft.
  3. Add all the mushrooms and a little extra water. Put a lid on the pan and cook until soft.
  4. Add 1 tablespoon of soy sauce and the mirin. Stir well.
  5. Add the tofu with the marinade and stir through the mushrooms. If you want you can add a little more water. Put the lid back on the pan and cook for about 5 more minutes.
  6. Meanwhile cook the rice noodles - this is usually very quick and easy. Drain the noodles and put in a bowl or on a plate.
  7. Add the tofu and mushrooms to the bowl.
  8. Sprinkle the vegetables and noodles with fresh parsley, green onions and sesame seeds. Add more soy sauce if desired. Serve warm & enjoy!
Recipe Notes

I am trying to reduce my oil consumption by cooking more with water. This works really well with garlic and onion, which burns easily. The taste is the same and vegetables get nice and soft without burning. It also reduces the calories of the dish which is a great bonus.
