Recipe: Salted caramel popcorn

If you’re a popcorn fan like me, you’ll love this recipe! The combination with vegan caramel is so yummy. Vegan caramel is very easy to make and I’m literally addicted to it (see these vegan caramel bars). This is a two-step recipe: first you make the popcorn and then the caramel which you pour over the popcorn and then roast in the oven. So, so good! Scroll down for the recipe.

Instructions
  1. Preheat oven to 150 degrees Celsius.
  2. Heat a large saucepan on the stove (medium high heat) with 1 tablespoon of coconut oil. Wait until the oil is melted and nice and hot before adding the corn kernels.
  3. When adding the corn kernels, make sure they form an even layer. Put a lid on the pan and wait for the popping to start.
  4. Turn the heat off once the popping slows down to about 3 seconds between each pop. If you wait too long the popcorn could burn. Set aside, the popping might continue a little longer.
  5. Make the caramel sauce by adding all ingredients to a small saucepan and heating it on medium-high heat. Whisk all ingredients together until you have a nice, thick caramel sauce (3-5 minutes). Add the baking soda just before you turn off the heat.
  6. Put the popcorn in a large bowl and pour the caramel over the popcorn. Mix well until all kernels are coated evenly.
  7. Put a baking sheet on a large baking tray and add the popcorn (spread out). Put in the oven for about 30 minutes (stir every 10 minutes).
  8. Remove from the oven and immediately sprinkle with some sea salt (while it’s still hot!). Allow the popcorn to cool before eating it so it gets nice and crunchy. Enjoy!
Recipe Notes

Store the popcorn in an airtight (glass) container in a cool place (not the fridge). It will last several days.
