This is the easiest vegan cheese recipe I have ever made and it’s a delicious savoury snack! It tastes a little like cream cheese and is great as a dip or spread. I love to spread this tofu cheese on toast or dip tortilla chips in it. These tofu cheese balls are super easy to make – no baking required!
Dice the tofu and add to your food processor with the olive oil, maple syrup, nutritional yeast, vinegar, lemon juice, gomasio and the spices. Blend until you have a thick, smooth, creamy cheese-like mixture.
Remove the shells from the pistachios and finely chop them. Put on a plate.
Using your hands, form small balls from the tofu mixture and roll them in the chopped pistachios.
Put the cheese balls on a plate covered with a baking sheet and put in the fridge for an hour or two so that they become nice and firm.
If the tofu is too wet to form balls, add some more nutritional yeast or mix the pistachios through the tofu mixture. That makes it easier to form small balls.
If you haven't heard of gomasio, it's a type of seasoning consisting of sesame seeds and salt, often used in Japanese cuisine. It's delicious and you can buy it at an asian supermarket or an organic supermarket. If you can't get your hands on it, it's easy to make yourself by roasting sesame seeds and salt and crushing the seeds after you roast them. It's super tasty!
