Recipe: potato gratin

This delicious recipe for a vegan potato bake is perfect when you’re in need of some comfort food. It’s easy to prepare, super tasty and since it includes half a cauliflower – it’s healthy too. In this post I show you to make gratin – vegan of course!

I love potato gratin. You can serve it as a side dish, with a green salad or just eat it as it is. It’s delicious and I love it so much I’ve made it twice last week. I always use Wilmersburger cheese to make anything oven-baked, which is a great vegan cheese. Any other vegan cheese that melts well works with this recipe. You can also choose to omit the cheese, which is much healthier, and just bake the dish until the potatoes are golden brown. By the way, I use pre-cooked, pre-sliced (organic) potatoes for this recipe, just because it’s much easier. You can also make this recipe with raw potatoes and have them cook in the cream while in the oven. They become softer that way. I prefer crispier potatoes, which is why I pre-bake them. If you choose to use raw potatoes, double the oven time (about 40 minutes) otherwise they won’t be fully cooked. Recipe below!

Instructions
  1. Pre-heat the oven to 200 degrees Celsius.
  2. Cut the cauliflower in half (you only need half) and in small florets.
  3. Put a large saucepan with water on the stove and bring to boil.
  4. Add the florets to the boiling water and cook for about 9 minutes. They have to remain slightly firm. Drain the florets and set aside.
  5. Bake the potatoes for about 20-30 minutes until golden brown. I use an airfryer or the oven to bake my potatoes because it's faster and healthier. I use 1 tablespoon of olive oil to bake them.
  6. Slightly grease an oven dish and put the potatoes in it. Put the cauliflower on top of the potato slices.
  7. Put a small saucepan on the stove and add the cream with the mustard, all the spices and the nutritional yeast. Whisk well.
  8. Once heated, pour the cream over the potato/cauliflower mixture and sprinkle with vegan cheese.
  9. Put in the oven for about 20-25 minutes until the gratin is golden brown and crispy.
