Recipe: Pasta with grilled veggies

There’s is nothing like a good pasta dish with lots of veggies and olive oil. That’s exactly what this dish is about – healthy, filling and beautiful. Scroll all the way down for the full recipe!

  1. Preheat the oven to 220 degrees Celsius.
  2. Grease an oven dish with some olive oil and add the tomatoes with the thyme, basil, pepper, salt, garlic powder and some olive oil. Put in the oven for 15-20 minutes until the tomatoes are soft.
  3. While the tomatoes are in the oven, cook the penne al dente. Set aside.
  4. Place a grill pan over medium-high heat. Lightly coat the vegetables with olive oil, salt and pepper. Grill the vegetables in batches (turning occasionally) until lightly charred and tender. Set aside on a platter.
  5. Cut the seasoned tofu into small cubes - the size of feta cubes. If you can't get your hands on seasoned tofu, just coat the tofu with a little oil and Italian seasoning (oregano, basil, garlic, rosemary, thyme, salt).
  6. Transfer the pasta to a large bowl and mix with the tofu, fresh spinach, grilled veggies and roasted tomatoes and pine nuts. Sprinkle with salt, pepper and nutritional yeast before serving.
