Cook the kohlrabi fries in a large saucepan for about 10 minutes until soft.
Drain the fries and pat dry with some paper towels.
Put the fries in a large bowl and toss with the spices, cornstarch and olive oil. Mix well (alternative: put the fries in a large plastic bag, add cornstarch and carefully shake the bag until all fries are covered).
Preheat your oven to 220 degrees Celsius or turn your airfryer on.
Add the fries to your airfryer or oven (spread evenly on a baking sheet) and bake them for about 40 minutes until golden brown and crispy. Flip the fries halfway through.
Sprinkle the fries with fresh parsley and serve warm with ketchup or vegan mayo. Enjoy!
