A while ago, I posted a recipe for vegan mayonnaise, made with regular tofu and cashews. That was before I discovered silken tofu. I still love my cashew mayo, but silken tofu on its own works fantastic to create a creamy mayonnaise, no nuts needed. Soaking and blending cashews can be quite a task, while blending silken tofu can almost be done by hand (almost!).
