Recipe: Healthy cauliflower mash

Who knew that you can mash cauliflower and make something that very closely resembles mashed potatoes? This healthy cauliflower mash is easy and tastes amazing!

I am absolutely not against eating potatoes, but I do believe it is one of the less nutritious plant foods. Nevertheless, I am always looking for new ways to eat vegetables, besides just cooking or steaming them. Cauliflower is one of those vegetables that is super healthy, but not that tasty. Mashed cauliflower may seem like baby food (I’m sure it is) but that doesn’t make it any less healthy and yummy! Adding a white potato or (even better) a sweet potato really makes it seem as if you’re eating mashed potatoes. Recipe below!

Instructions
  1. Cut the cauliflower into large pieces and peel the sweet potato. Cut the potato into large pieces and put in a large cooking pan with the cauliflower. Fill with water and put on the stove.
  2. Allow the water to cook for 20 minutes, until the cauliflower and potato chunks are soft.
  3. Drain the cauliflower/potato and put back into the pan. Leave it to cool off for a few minutes.
  4. Blend the chunks until you have a smooth mixture (either by hand or in a blender).
  5. Add the spices and mix well.
Recipe Notes

As said, this mashed cauliflower is great as a side dish and very healthy. You can also use broccoli, it works just as well.
