Recipe: Hasselback potatoes

If you’re a baked potato lover (like me!) this is a great dish. The potatoes are golden, crisp and sweet – a heavenly combination. Since they look so festive, they’re a great side dish to make for Christmas dinner. Who doesn’t love thinly sliced baked potatoes?

This recipe is nothing new. If you google ‘hasselback potatoes’ you will probably find lots of recipes. It’s basically a thin sliced baked potato. I didn’t come up with it myself but this is the way I like them the most (after many tries!). I always estimate 500 grams for two people which may seem like a lot – but for me potatoes are usually at the centre of my plate. I eat them with a salad or some roasted vegetables. If you eat them as a side dish, I suggest taking about 300 grams. I prefer to use very few spices; I don’t even add garlic powder which is my favourite spice :-). I am more generous with the olive oil than I usually am. Other than that, keep it simple and enjoy the amazing taste of these baked potatoes!

Serve these yummy potatoes with vegetables, like a green salad, or stuff them with thinly sliced pumpkin, zucchini or eggplant before putting them in the oven. They’re also great as a side dish with vegetable schnitzels or tempeh nuggets. So delicious! Enjoy!

Instructions
  1. Preheat the oven to 200 degrees Celsius.
  2. Wash the potatoes and dry them off with a tablecloth.
  3. Cut the potatoes across the width, very thin (about 2 mm apart). Don’t cut all the way through!
  4. Put some parchment paper on a baking tray and place the potatoes on it.
  5. Sprinkle the potatoes generously with olive oil and sprinkle with rosemary, sea salt and pepper.
  6. Roast the potatoes in the oven for about 60 minutes until they’re golden. Flip them every 20 minutes.
  7. Remove the potatoes from the oven and drizzle with agave syrup. But the potatoes back in the oven for about 5-10 more minutes.
