Recipe: Grilled vegetable sandwich

When I was in Ibiza 2 weeks ago, I discovered this amazing sandwich with grilled veggies and guacamole. It was SO GOOD and I decided to remake it and put the recipe on my blog. I gave it my own twist of course and I absolutely love it. The best vegan sandwich; easy to make and perfect for summer!

Instructions
  1. To make the guacamole, simply add all ingredients to your food processor and pulse a few times (depending on how smooth you like your guacamole). Set aside.
  2. Place a grill pan over medium-high heat. Lightly coat the vegetables with olive oil, salt and pepper. Grill the vegetables in batches (turning occasionally) until lightly charred and tender. Set aside on a platter.
  3. Cut the baguette into 3-4 sandwiches. Coat the halves with guacamole and layer with the grilled veggies. Finally, add some lettuce and squeeze the halves together. Enjoy!
