Recipe: Gnocchi with pesto

A lovely vegan dish which is great as a side dish or for lunch. The avocado pesto is easy to make and gnocchi cook in minutes. I love simple recipes and this one literally takes fifteen minutes.

You can make the gnocchi yourself, or just get store-bought gnocchi. I always make sure they contain at least three-thirds potato (check the ingredients!) and no weird additives I don’t recognize. The best gnocchi contain potato, flour and salt. Of course making them yourself is much healthier, so I will add a simple vegan gnocchi recipe to the blog soon! This dish takes no time at all to make, even if you still have to make the pesto. Just cook the gnocchi, blend the pesto and stir through. That’s it! Instructions
  1. Bring a large pot of water to boil and add the gnocchi.
  2. Let the gnocchi cook for a few minutes until they float to the surface.
  3. If you haven’t already: add all the ingredients for the avocado pesto to your food processor and process until you have a smooth yummy pesto.
  4. Drain the gnocchi and put back in the warm pan.
  5. Stir about three large tablespoons of avocado pesto through the gnocchi.
  6. Add some salt & pepper.
