Recipe: Creative fruit salad

It may officially be fall, but the weather is still so warm and sunny that it’s easy to hang on to the summer feeling. This fruit tart will also do the trick! It’s healthy, easy to make and super delicious. Scroll all the way down for the recipe!

I usually start my day by eating fruit and whenever I crave something sweet I also eat fruit. That’s why I’m always looking for new ways to eat fruit (smoothies, nice cream) and that’s also how I came up with this creative fruit salad. All you need is some fresh fruit and coconut milk – this combination is delicious. You also need a serving ring, but you can also make one using aluminium foil. A simple fresh fruit salad has never looked so pretty :-).

  1. Peel the apple and kiwi and cut into small dices.
  2. Cut the melon in half and with a spoon scoop out all the seeds. You need about 1/4 melon for the tart. Slice the half into wedges. Remove the skin and cut the melon into small cubes.
  3. Put the apple, kiwi and melon in a bowl and add the coconut milk. Stir well.
  4. Rinse the strawberries and remove the green caps. Slice them in half.
  5. Put the serving ring on a platter and add the fruit/coconut milk mixture. Gently press down with a spoon - make sure it's firmly in there!
  6. Put the strawberry slices on top (you can add an extra strawberry to make it look pretty!)
  7. Carefully remove the serving ring. If the tart falls apart, it means the fruit wasn't firmly in the ring. Try again or just eat the fruit from the ring - it won't taste any less good!
  8. Serve the fresh fruit salad with some extra coconut milk or fruit you have left over. Enjoy!
