Recipe: French toast

I’ve always loved French toast – basically toasted bread in a milk-egg batter, lots of cinnamon and sugar. It’s quite easy to make vegan French toast – just lose the egg. Also, to make it a healthier breakfast, use whole-wheat toast and add fresh fruit. Delicious!

  1. In a shallow dish, whisk the milk, cinnamon and vanilla.
  2. Dip the bread slices in the milk mixture, turning to coat both sides evenly.
  3. Heat the oil in a non-stick skillet or grill pan on medium-high heat. Wait until the pan is hot and add the bread slices. Cook on both sides until browned and crunchy.
  4. Serve with fresh fruit and maple syrup or coconut sugar. Enjoy!
