Recipe: Easy sundried tomato pasta

This is my go-to pasta recipe when I have very little inspiration. Anything with passata is always fine with me. This sundried tomato pasta recipe is one of the examples of how easy it is to be vegan; you really don’t need meat or dairy for a good pasta dish. Scroll down for the recipe!

  1. Cook the penne pasta according to package directions (al dente). Drain and set aside.
  2. Heat a large wok or skillet on medium-high heat and add some water or olive oil.
  3. Add onion and garlic and cook for a few minutes until soft.
  4. Add the passata and stir. Turn the heat down to medium-low.
  5. Add vinegar, oregano and a little salt. Cook for a few minutes until the sauce is warm (not boiling).
  6. Add sundried tomatoes and olives. Stir through the tomato sauce.
  7. Add the penne pasta and stir through the sauce.
  8. Finally, add the pine nuts and turn the heat off.
  9. Serve warm with salt, pepper and some nutritional yeast. You can also add some fresh basil and/or arugula. Enjoy!
Recipe Notes

You can easily cook vegetables in water or vegetable broth instead of oil. It reduces the calories/fat in your dish and tastes just as good. If you're an olive oil fan you can always sprinkle your dish with a little extra virgin oil for the taste.
