Recipe: Easy mushroom gravy

This easy mushroom gravy is perfect to serve at a dinner party or at Christmas dinner! It is vegan, delicious and also very healthy.   1. Heat a large saucepan over medium-high heat and add a little water.
  2. Add the mushrooms and shallots to the hot pan with some salt. Cook the mushrooms and shallots for about 10 minutes, until they are light brown. Stir every few minutes.
  3. Sift the flour and add to the pan together with the wine, vegetable stock, soy sauce, garlic, thyme and pepper. Stir well and put a lid on the pan. Simmer for about 10 more minutes until the gravy is nice and thick.
  4. Serve warm over mashed potatoes or oven-roasted cauliflower. Enjoy!
Recipe Notes
  1. You can use any kind of mushrooms you like.
  2. You can store the gravy in the fridge for up to 4 days. Just reheat in a microwave or simmer in a saucepan.
