Recipe: Creamy mushroom pasta

I love a good creamy vegan pasta and luckily it’s very easy to make. This mushroom and onion sauce is delicious, healthy and takes about fifteen minutes to prepare.

As a pasta lover, I am always looking for vegan pasta ideas, and this is one of my favourites. It’s very easy to make a vegan cream sauce – I like to use rice cream, but any non-dairy cream will do fine.

You can add the cooked pasta directly to the pan, or put it on a plate and pour the mushroom cream sauce over it. I like to add the pasta to the pan so the sauce and the pasta can really mix well.   1. Cook the pasta al dente and set aside.
  2. Wipe mushrooms clean with a towel and remove the stems. Thinly slice the mushrooms.
  3. Chop the onion and garlic.
  4. Heat a large wok or skillet with the olive oil over medium-high heat. Add the onion, garlic and mushrooms. Cook until soft.
  5. Add the balsamic vinegar to the mushrooms and cook until it evaporates.
  6. Season the mushrooms with the spices. Cook a few more minutes and then stir in the cream.
  7. Add the nutritional yeast to the mushroom cream sauce and stir through. Make sure the sauce is warm but not boiling before you serve it.
