Recipe: Chocolate chip oatmeal cookies
organic peanut butter
unsweetened coconut or soy milk
cacao nibs or chopped dark chocolate
Pre-heat the oven to 180 degrees Celsius.
Put the almond flour in a bowl with the baking soda, grated coconut and (optional) cacao powder.
In a separate bowl, mix the peanut butter with the coconut milk and vanilla essence.
Add the ‘wet’ mixture to the ‘dry’ mixture and stir well with a mixer until smooth. If you want to add cacao nibs/chopped chocolate add them now.
With your hands, form small balls from the mixture and put them on a baking tray with a baking sheet. Flatten them with your fingers.
Place them in the oven for about 10 minutes. Leave to cool before you eat them. And don’t hesitate to eat them all, they are healthy :-).
