Best vegan brownie recipe

A good vegan brownie recipe is not easy to find. I always struggle with what kind of flour to use, whether or not to add sugar (and how much) and how to replace eggs, milk, butter… Luckily I am becoming better and better at it, and surprisingly this recipe just rolled out of me.

Coming up with this recipe only took one try and I was shocked by how delicious these fudgy vegan brownies are. If you have a massive sweet tooth, they may not be sweet enough for you (you can always add more syrup) but to me these are perfect! Creamy, chocolaty, sweet – and dairy-free. These aren’t raw brownies, but very easy to make, I promise. These brownies can be saved in the fridge for a week. They are best after a night in the fridge to the chocolate chips have hardened.   1. Preheat the oven to 180 degrees Celsius.
  2. Put the apple sauce, peanut butter, syrup, vanilla extract and soy milk in a food processor and process until smooth.
  3. Sift the flour and add it to the food processor with the cacao powder and the baking soda. Process until the mixture is smooth and chocolaty-colored:)
  4. Chop up the dark chocolate and stir the chocolate chips through the brownie mixture.
  5. Pour the batter into a slightly greased baking tin/cake tin/pan (whatever you have!) and put in the oven for about 40 minutes (or until a toothpick comes out clean).
  6. Leave to cool; it is much easier to cut once cooled (and much tastier too!)
