Since I am currently residing in the south of France, I decided to post a France-inspired recipe today. It’s recipe Wednesday after all, whether I’m on vacation or not! This recipe for home-made baked French fries is simple, delicious and as healthy as French fries can be. Scroll down for the best baked French fries recipe!
By the way, if you’re wondering about that delicious sauce on the photos, that’s my home-made vegan aioli. Aioli is basically garlic mayonnaise and I am a huge fan. The classic aioli is made with eggs and very thick (and fattening). My version is made with creamy, silken tofu and a little thinner, but much better (and healthier!). It’s great as a dip or sauce with some raw veggies, toast or home-made fries!

Ingredients
For the fries:
- 500 grams firm potatoes
- 1 tbsp. olive oil extra virgin
- Pepper & salt
For the aioli sauce (a big batch):
- 400 grams silken tofu
- 3 cloves garlic minced
- 1 tbsp. olive oil extra virgin
- 1 tsp. salt
- 1 tbsp. lemon juice
- 1 tbsp. agave syrup
- 2 tsp. paprika

Instructions
- Wash and peel the potatoes. With a knife or a slicer, cut the potatoes into wedges or French fries, whichever you prefer.
- Put some parchment paper on a baking tray or add the fries to your airfryer. If you're using an oven, make sure you pre-heat it first (225 degrees Celsius).
- Mix the fries with the oil, salt and pepper and add to your airfryer/oven for about 45 minutes.
- While the potatoes are baking, it's time to make the sauce. Simply add all ingredients to your food processor and blend until smooth. Chill in the fridge until the fries are done.
- Serve the fries with the aioli sauce when they're still nice and hot and sprinkle with a little extra salt. Enjoy!
